Preparation Instructions
You'll need the following Ingredients:
4 I&J Saucy
Secrets Tangy Cheese cooked according to the preparation guide
Dill & Wholegrain Mustard Potato Salad
400 g potatoes
2 eggs
2 tablespoons finely chopped dill
1 finely chopped small onion
Dressing
1 egg yolk
2 teaspoons lemon juice
1 teaspoon wholegrain mustard
100 ml olive oil
Salt and pepper to season
Preparation method:
- Cook the potatoes in boiling water for 20 minutes, or until soft. Add the eggs for the last 10 minutes
- Remove from the heat, drain and cool
- Peel the potatoes, cut them into 2cm chunks and place in a bowl
- Peel the eggs and chop coarsely. Add the egg, dill, and onion to the potatoes
- To make the dressing, whisk together the egg yolk, lemon juice and mustard. Pour the olive oil into this mixture in a light steady stream while still whisking
- Combine the dressing and potatoes and mix thoroughly. Season with salt and pepper
