I&J Homestyle Burgers Low Fat Roasted Red Pepper Sauce

Preparation Instructions

You'll need the following Ingredients:

2 red peppers
2 tablespoons olive oil
1 roughly chopped red onion
1-2 crushed garlic cloves
1 can chopped tomatoes
2 tablespoons chopped parsley
2 tablespoons chopped basil
1 tablespoon tomato paste
1 tablespoon caster sugar
Salt and pepper to season

Preparation method:

  1. Cut the peppers into quarters, remove the membrane and seeds. Grill, skin side up, until blackened. Cool in a plastic bag for 10 minutes, peel away the skin and chop roughly
  2. Heat the oil in a pan and cook the onion and garlic for 2 minutes. Add the tomatoes, parsley, basil, tomato paste, sugar and 1 ½ cups of water.
  3. Stir well
  4. Add the chopped peppers and cook, stirring often, over a very low heat for 45 minutes, or until thick
  5. Leave to cool, then puree until smooth. Season with salt and pepper
  6. Serve as a sauce with the Homestyle Light burgers and the side salad with a light lemon vinaigrette
