
You'll need the following Ingredients:
2 tablespoons oil;
6 thinly sliced red onions.
1kg unpeeled baby potatoes;
8 rashes streaky bacon;
30g snipped chives.
Mayonaise – 250g mayonnaise;
1 tablespoon Dijon mustard;
juice of 1 lemon;
2 tablespoons sour cream;
salt and pepper to season.
Preparation method:
Heat the oil in frying pan, add the onions and cook over a moderate-low heat for 30 minutes, or until soft and caramalised. Chop potatoes into large chunks and cook in boiling water for 10 minutes, until tender. Grill bacon until crispy. Drain on paper towl and chop roughly. Mix potatoes, onion and chives into a bowl. Whisk mayonnaise ingredients together and add to potatoes. Sprinkle with the bacon and remaining chives and serve with I&J Saucy Secrets Cheese and Garlic portions.
