I&J Light & Crispy Classic with balsamic glazed vegetables

Preparation Instructions

You'll need the following Ingredients:

6 portions Light & Crispy Classic
1 red pepper, cut into pieces
1 green pepper, cut into pieces
1 yellow pepper, cut into pieces
10 courgettes, cut into chunks
11/2 small butternut, peeled and cut
into 1 cm cubes
Salt and pepper to season
Glaze:
120 ml balsamic vinegar
75 ml honey
40 ml soft brown sugar
40 ml olive oil

Preparation method:

  1. Pre-heat the oven to 200 ºC
  2. Place all the prepared vegetables on a baking sheet and evenly sprinkle over the balsamic vinegar, honey, brown sugar and olive oil
  3. Bake for ± 45 minutes or until the vegetables are soft and glazed
  4. Serve immediately with the Light & Crispy Classic portions cooked according to the preparation guide
