1 red pepper (cut into pieces)
1 green pepper (cut into pieces)
1 yellow pepper (cut into pieces)
10 courgettes (cut into chunks)
1½ small butternut (peeled and cut into 1cm cubes)

Salt and pepper to season

For the glaze:
120ml balsamic vinegar
75ml honey
40ml soft brown sugar
40ml olive oil

Prepare I&J Out’O the Oven Fish Fillet Portions as per pack instructions
Pre-heat oven to 200°C
Place all the vegetables on a baking sheet and sprinkle the glaze mixture evenly on top Bake for ± 45 minutes or until the vegetables are soft and glazed

Serve immediately with the I&J Out’O the Oven Fish Fillet Portions
