Preparation Instructions
You'll need the following Ingredients:
400 - 600 g Haddock Fillets, cooked as per the preparation guide and flaked into large chunks
25 g butter or margarine
25 g flour
150 ml warm milk
100 ml warm cream
100 g grated mature cheddar cheese
2 ml mustard powder
11/2 cups blanched broccoli florets
1/2 cup dried breadcrumbs
Preparation method:
- Melt the butter in a saucepan over a low heat, remove from the heat and add the flour
- Return to the heat and cook for 2 minutes, stirring all the time
- Combine the milk and cream and gradually start adding to the flour and butter mixture (roux), whisking continuously
- Once all the milk has been added, simmer over a low heat for 3-5 minutes, stirring frequently until the mixture has thickened
- Remove from the heat and stir in the cheese, mustard, broccoli and Haddock
- Season well with salt and pepper
- Place into an oven-proof dish and sprinkle with breadcrumbs and a little extra grated cheese. Bake at 180 oC for 10 - 15 minutes until the crumbs are crisp and golden brown
