Preparation Instructions
You'll need the following Ingredients:
500 g Haddock Prime Steaks cooked according to the preparation guide
40 g butter or margarine
40 g flour
400 ml heated milk
50 g mature cheddar cheese
100 g crumbled feta cheese
2 ml mustard powder
1 cup shredded and blanched baby spinach
Salt and pepper to season
Preparation method:
- Cook the Haddock according to the preparation guide and while it is cooking, prepare the sauce
- Melt the butter in a saucepan over a low heat, remove from the heat and add the flour
- Return to the heat and cook for 2 minutes, stirring continuously
- Gradually start adding the warm milk to the flour and butter mixture (roux), whisking continuously
- Once all the milk has been added simmer over a low heat for 3-5 minutes, stirring frequently until the mixture has thickened
- Remove from the heat and stir in the cheese, mustard and spinach. Season well with salt and pepper
- Serve immediately with Haddock Prime Steaks and savoury rice made with sautéed onions, peppers and herbs
