Saucy Secrets Beef Cheese & Mushroom Served with mashed potato topped with chargrilled vegetables

Preparation Instructions

You'll need the following Ingredients:

6 I&J Saucy Secrets Cheese and Mushroom cooked according to the preparation guide
Chargrilled Vegetables
1 sliced large aubergine, cut into wedges
10 cherry tomatoes
2 red peppers, cut into chunks
1 green pepper, cut into chunks
2 baby marrows, sliced into 2 cm pieces
100 ml olive oil
1 crushed garlic clove
1 teaspoon sugar
2 tablespoons balsamic vinegar
Salt and pepper to season

Preparation method:

  1. Pre-heat the oven to 200C.
  2. Place the vegetables onto a baking tray and drizzle with olive oil.
  3. Bake for 3 minutes, remove from the oven and add garlic. Season with sugar, balsamic vinegar, salt and pepper.
  4. Roast for a further 30 minutes until charred around the edges.
  5. Serve with fluffy mashed potato and the Saucy Secrets Cheese and Mushroom portions.
