Greek Tzatziki Dip

Best served with I&J Fish Bite & DELIGHT

Ingredients

  • 1 x 500 g pack I&J Fish Bite & DELIGHT
  • mini cucumbers, thickly sliced
  • red and orange pepper pieces, roasted or grilled
  • red onion pieces, roasted or grilled
  • 125 ml plain double cream yoghurt
  • 50 ml grated English cucumber (drained)
  • 1 garlic clove, grated
  • 5 ml lemon juice
  • 5 ml shredded mint leaves
  • salt
  • milled black pepper
  • pita breads
  • baby spinach leaves
  • lemon wedges

Method

  • Cook the I&J Fish Bite & DELIGHT as per the cooking instructions on the pack.
  • Thread onto skewers, together with the cucumbers, peppers and red onion.
  • To make the dip: Combine the yoghurt, grated cucumber, garlic, lemon juice and mint. Season with salt and black pepper.

Place the I&J Fish Bite & DELIGHT skewers and baby spinach leaves on the pita breads. Serve with the dip and lemon wedges.
