Super Creamy I&J Haddock Mac & Cheese

Ingredients

  • I&J Haddock Medallions
  • Raw pasta (use your favourite shape)
  • White sauce, seasoned with salt and milled black pepper
  • Fresh cream
  • Prepared mustard
  • Grated Cheddar cheese
  • Melted butter
  • Panko breadcrumbs
  • Chopped chives

Method

  • Pre-heat the oven to 190º
  • Poach the frozen I&J Haddock Medallions as per the cooking instructions on the pack. Break into chunks.
  • Boil the pasta until al dente.
  • Add the fresh cream, mustard and grated Cheddar cheese to the white sauce. Mix well. Then add the cooked pasta and Haddock chunks. Mix well.
  • Spoon into an ovenproof dish.
  • Prepare the crumb topping: mix the melted butter into the Panko breadcrumbs until coated. Stir in the chopped chives. Spoon the crumb mixture over the Haddock and pasta mixture.
  • Bake for 25 – 30 minutes.
