- Preheat the oven to 180°C.
- Mix eggs and milk.
- Season the I&J Deep Water Hake Prime Medallions and dip into the flour, shaking off the excess. Dip into the egg mixture, and then into the breadcrumbs. Repeat once with each medallion.
- Pan-fry the fish in oil for 2 minutes each side, turning until the crumb is golden (approximately 6 minutes in total).
- Bake the fish in the preheated oven for 10 minutes, or until cooked.
Serve with lemony mashed potatoes, greens and fresh lemon wedges.
