I&J Oak Smoked Haddock and Brocolli bake

Preparation Instructions

You'll need the following Ingredients

400 - 600 g Haddock Fillets, cooked as per the preparation guide and flaked into large chunks
25 g butter or margarine
25 g flour
150 ml warm milk
100 ml warm cream
100 g grated mature cheddar cheese
2 ml mustard powder
11/2 cups blanched broccoli florets
1/2 cup dried breadcrumbs

Preparation Method:

  1. Melt the butter in a saucepan over a low heat, remove from the heat and add the flour
  2. Return to the heat and cook for 2 minutes, stirring all the time
  3. Combine the milk and cream and gradually start adding to the flour and butter mixture (roux), whisking continuously
  4. Once all the milk has been added, simmer over a low heat for 3-5 minutes, stirring frequently until the mixture has thickened
  5. Remove from the heat and stir in the cheese, mustard, broccoli and Haddock
  6. Season well with salt and pepper
  7. Place into an oven-proof dish and sprinkle with breadcrumbs and a little extra grated cheese. Bake at 180 oC  for 10 - 15 minutes until the crumbs are crisp and golden brown

Product Preparation Guide

Remove all packaging. For best results cook directly from frozen.  All appliances vary in performance.  The following instructions are a guideline only.

Poach:
Place in enough boiling water to just cover fish.  Cover with lid and simmer for approximately 9-11 minutes.

Bake:
Place in a lightly greased oven dish.  Dot with soft margarine and bake in a preheated oven at 200°C for 30-35 minutes.

Pan-Fry:
Dip in warm water just before coating.  Coat fillets in seasoned flour.  Heat a little soft margarine and oil in a pan.  Fry over moderate heat for approximately 10-12 minutes, turning occasionally.

Grill:
Brush both sides of the fillets with melted margarine.  Place on a baking tray and grill for 11-12 minutes.

Microwave:
Place 600g Fillets in a suitable container.  Cover with clingwrap and prick.
650Watt -Microwave on DEFROST for 7-9 minutes, then on HIGH for 6-7 minutes.
900Watt - Microwave on DEFROST for 6-8 minutes, then on HIGH for 5-6 minutes
