I&J Yankee Clippers baked in a Spicy Chakalaka Sauce
Preparation Instructions
You'll need the following Ingredients
800 g Yankee Clippers
45 ml oil
2 grated onions
2 crushed garlic cloves
2 chopped green peppers
3 de-seeded and chopped green chillies
10 ml curry powder
3 grated medium carrots
1 medium cauliflower, divided into florets
2 x 410 g can baked beans in tomato sauce
salt and pepper to taste
Preparation Method:
Chakalaka Sauce:
- Heat the oil and sauté onions, garlic, ginger and green pepper with the chillies and curry powder for five minutes
- Add carrots and cauliflower. Cook gently for about 15 minutes, or until all vegetables are cooked
- Add beans and season to taste
- Preparing the dish:
- Place the Yankee Clippers in an ovenproof dish and pour the Chakalaka sauce over the fish
- Bake in a pre-heated oven for 20 – 25 minutes or until the fish is cooked through
