Add a burst of flavours to your midday meal with a delightful blend of Golden Smackeroos, jasmine rice, scrambled egg, spring onions, and toasted sesame seeds, served with mini cucumbers and carrot quarters, for a lunchtime that’s both satisfying and good for you.

12 x I&J Golden Smackeroos 800 g
1 Tbsp (15 ml) sesame oil
1 cup cooked jasmine rice
1 egg, scrambled
2 spring onions thinly sliced
2 tsp (10 ml) sesame seeds, toasted
2 Tbsp (30 ml) soya sauce
1 Tbsp (15 ml) olive oil
2 tsp (10 ml) honey
2 tsp (10 ml) lime juice
4 mini cucumbers, halved
1 carrot, peeled and cut into quarters
METHOD
1.
Heat the oil in a pan, add the egg and rice and mix well, fry for 2 minutes. Toss in the spring onions and sesame seeds. Place into the lunch box.

Mix the soya sauce, olive oil, honey and lime juice together, and set aside.

Pre-heat air-fryer to 200°C. Place Golden Smackeroos in a single layer in the basket. Air-fry for approximately 7 minutes. Place on top of the rice and drizzle over the soy dressing. Serve with cucumber and carrots on the side.
