Cape Hake Fillets and Spinach Bake

Ingredients:

  • 400 g I&J Deep Water Hake Fillets
  • 2 Tbs. garlic
  • Half a white onion
  • Handful spinach, chopped
  • 1 can tomatoes
  • 1 Tbs. onion powder
  • 1 Tbs. sweet basil
  • 1 Tbs. fish seasoning
  • 1 Tbs. Cajun seasoning
  • 1 Tbs. brown sugar
  • Salt and pepper, to taste
  • 3 Tbs. oil
  • Half a red pepper
  • 1 stock cube in a cup of hot water

Method:

  • Heat the oil in the pan and add the onions and red pepper. Fry until translucent.
  • Add the spinach and wilt.
  • Add seasoning and mix well.
  • Add the tomatoes, sugar, and the stock cube in water, and simmer for 10 minutes.
  • Preheat the oven to 180°C, once the tomato mixture is cooked, add the I&J Deep Water Hake fillets, season with salt and pepper and bake for 25 min.
  • Serve with rice or couscous.
