I&J Hake Prime Medallions with Red Pesto Topping

Serves 3-4


  • 1 x 450 g pack I&J Deep Water Hake Prime Medallions
  • Red Pesto


  • Pre-heat the oven to 190º
  • Arrange the I&J Deep Water Hake Prime Medallions in an ovenproof dish, lightly greased with olive oil.
  • Mix the red pesto with a little olive oil. Spoon the pesto over the Medallions.
  • Bake for 35 − 40 minutes, or until cooked. Baste the Medallions a few times during baking with the oil in the dish.

Serving suggestion

Serve with tagliatelle, tossed with olive oil, sliced pitted black olives and chopped fresh origanum. Add a bowl of grated Parmesan cheese.
