Light & Crispy with Aubergine Caprese Salad

Serves 4

Ingredients

  • 1 x 500 g pack I&J Light & Crispy Classic
  • aubergine slices
  • tomato slices
  • Mozzarella cheese slices
  • basil pesto and fresh basil leaves

Method

  • Pre-heat the oven to 220ºC.
  • Place the aubergine slices on a baking tray. Brush both sides lavishly with olive oil. Bake, turning a few times, for 13 – 15 minutes. Season with salt.
  • Bake the I&J Light & Crispy Classic portions as per the cooking instructions on the pack.
  • Arrange overlapping slices of tomato, Mozzarella and aubergine on serving plates. Drizzle with the pesto. Add basil leaves.
