For those who like the idea of sushi but prefer their fish to be cooked, here’s the perfect solution.

INGREDIENTS
300 g I&J Fish Bites
Sunflower oil for deep-frying
2 cups cooked sushi rice, (cooked per packet instructions)
4 Tbsp (60 ml) soy sauce
2 Tbsp (30 ml) sesame oil
Juice of 1 lime
1 Tbsp (15 ml) toasted sesame seeds
3 spring onions, sliced
1 sheet of nori, cut into thin strips
1 Tbsp (15 ml) wasabi
3 Tbsp (45 ml) kewpie mayonnaise
2 Tbsp (30 ml) pickled ginger
2 Tbsp (30 ml) fresh coriander
1 lime, to serve
METHOD

Prepare the sushi rice according to package instructions.

Mix the soy sauce, sesame oil, lime juice and toasted sesame seeds together. Set aside. Slice the spring onions and nori and mix the wasabi and kewpie mayo together
