SHORT DESCRIPTION
Fish cakes and salad make a quick and easy lunch. I&J Fish Cakes are delicious warm or at room temperature. Make a small salad and home-made vinaigrette while the Fish Cakes are baking, and pack into a lunchbox with some fresh blueberries for dessert.
Serves 1
INGREDIENTS
4 I&J Fish Cakes
¼ cup blueberries
5 crisp lettuce leaves
4 baby tomatoes, quartered
25 g feta, cubed
25 g olives
Dressing:
50 ml olive oil
1 Tbsp (30 ml) lemon juice
1 tsp (5 ml) Dijon mustard
1 tsp (5 ml) honey
Salt and pepper to taste
METHOD
1. 
Pre-heat oven to 200°C. Place Fish Cakes on a lightly greased baking tray. Bake for approximately 20 minutes. Turn after 15 minutes. Allow to cool before packing into lunchbox.
