Our Haddock Cakes, brown rice, a small salad plus a handful of fresh cherries to end off make a delicious and filling lunch.

INGREDIENTS
4 I&J Haddock Cakes
¼ cup brown basmati rice, cooked
¼ cup fresh cherries
4 baby tomatoes, sliced
10 picked basil leaves
25 g grated Parmesan
1 Tbsp (15 ml) olive oil
METHOD

Pre-heat oven to 200°C. Place Haddock Cakes on a lightly greased baking tray. Bake for approximately 20 minutes. Turn after 15 minutes. Allow to cool before packing into lunchbox.
