STUFFED PITAS WITH GOLDEN SMACKEROOS
SHORT DESCRIPTION
Doing all the prep at home and then assembling the pitas just before eating keeps the pitas fresh and the Golden Smackeroos crisp until lunchtime.

INGREDIENTS
10 I&J Golden Smackeroos
3 pita breads
½ carrot, julienned
2 Tbsp (30 ml) grated cheddar cheese
1 baby cucumber, peeled into ribbons
1 Tbsp (15 ml) toasted sesame seeds
¼ cup hummus
METHOD
1.
Heat a little oil in a frying pan. Add Golden Smackeroos and cook over medium heat for approximately 7 minutes. Turn frequently so they crisp on all sides. Set aside to cool.

Lightly toast the pita breads in the toaster and place into the lunchbox along with carrot, cheese and cucumber ribbons. Pack hummus and toasted sesame seeds in separate small containers that fit into lunchbox.
