DEEP-FRIED HAKE IN BEER-STYLE BATTER
SHORT DESCRIPTION
A quick and easy, light beer-style batter envelops mildly flavoured, flaky Cape Hake fillets, making them yummy and ultra-crispy.
Serves 4
INGREDIENTS
4 x I&J Deep Water Hake Fillets
Oil, for deep-frying
200 g cake flour for batter, plus extra for dusting
4 tsp (20 ml) baking powder
300 ml non-alcoholic, unflavoured beer
METHOD
1.
Fill a deep pot or deep-fat fryer with oil and pre-heat to 190°C.

Whisk the cake flour and baking powder together. Add the non-alcoholic beer and mix to a smooth batter.
3.
Season the frozen I&J Deep Water Hake Fillets. Dust with the extra cake flour and then dip into the batter. Gently lower the fillets into the hot oil. Cook for approximately 8 minutes, or until golden brown and cooked through. Place on paper towels before serving.
4.
Serve with fries and fresh lime or lemon wedges.
