Light & Crispy Hake Fillet portions show off their versatility in these stuffed pitas which are as easy to make as they are to eat.

INGREDIENTS
3 x I&J Light & Crispy portions
100 g vine tomatoes
1 Tbsp (15 ml) olive oil
Salt and pepper for seasoning
3 pita breads
90 ml tzatziki
50 g rocket
½ a red onion, thinly sliced
1 avocado, peeled and sliced
A handful of rocket leaves
METHOD

Pre-heat the oven to 220°C. Bake the frozen I&J Light & Crispy portions for approximately 17 minutes until crisp and cooked through.

Place the tomatoes into a roasting tray, drizzle over olive oil and season with salt and pepper.

Heat the pita breads. Cut in half, spoon tzatziki into each pita, top with wild rocket, slices of red onion, flakes of cooked Light & Crispy, roasted tomatoes and avocado slices.
